Every year we immerse you in our top birthday cake inspiration. This year you will receive Ils' favorite recipe, our logistics power lady. Meet the classic bresilienne cake, a cake that never disappoints!
The recipe below is for 8 people
Supplies:
- For the base: 400 g flour, 30 g sugar, 80 ml milk, 1 ie, 210 g butter, 18 g fresh yeast, pinch of salt
- For the pudding: milk 100 ml, 1 egg, 200 g sugar, 10 g vanilla pudding powder
- For the flan: 475 ml sugar, 65 g flour, 1 vanilla pod, 4 eggs, 75 g sugar
- Finishing: 300 ml cream, 100 g berry nuts, 1 tbsp icing sugar
Preparation method:
1. Start by making your base
- Place flour with the soft butter, sugar and coarse sea salt in the mixing bowl of the food processor and let it run.
- Heat the milk in a saucepan, crumble the yeast into it and let it dissolve completely. Add the egg to the dough and add the lukewarm milk with the dissolved yeast. Mix into a nice firm dough. Knead the dough well and shape it into a nice ball. Place the dough ball in a bowl and cover with cling film. Let rise at room temperature.
2. Make the pudding
- Heat the milk. Separate the egg and beat the yolk with a whisk with the sugar and vanilla pudding powder. Add a little of the warmed milk and stir. Add the rest of the milk and place back on the heat. Heat while stirring until the pudding is thickened. Pour into a bowl and let cool.
3. Make the flan
Pour the milk into a bowl, add the sugar, flour and eggs. Cut the vanilla pod in half, scrape out the seeds and add them to the rest of the ingredients. Mix everything with the hand blender. Add the cooled pudding to the flan and mix again with a hand blender until you have a homogeneous pudding. Let the mixture rest for a while.
3. Make the flan
Pour the milk into a bowl, add the sugar, flour and eggs. Cut the vanilla pod in half, scrape out the seeds and add them to the rest of the ingredients. Mix everything with the hand blender. Add the cooled pudding to the flan and mix again with a hand blender until you have a homogeneous pudding. Let the mixture rest for a while.
4. Preheat the oven to 200 °C
- Grease a 26 cm diameter cake tin with butter and dust with flour. Unroll the dough on a floured work surface. Line a pie tin with the dough and press firmly against the edges. Cut away the excess dough
- Place the dough in the freezer for 10 minutes so that it becomes firm again. Remove the dough from the freezer and pre-bake the base in the oven for 15 minutes. Reduce the oven temperature to 175°C.
- Fill the base with the flan and bake the cake in the oven for 35 minutes. Take them out and let cool completely.
5. Finishing
- Beat the cold whipped cream with the icing sugar until stiff and cover the cake generously with it. Sprinkle generously with the bresilienne nuts and serve immediately.
